    Eating foods high in saturated fat increases blood levels of LDL cholesterol and total cholesterol.  These blood values are risk factors for heart disease and play a role in the build-up of plaque in coronary arteries.  Choosing primarily unsaturated fats (liquid at room temperature) can help to lower LDL cholesterol levels, especially when used in place of foods with a lot of saturated fat.
