Counseling helps you quit smoking by helping you realize the issues involved and you get to quit that way.  It helps you with motivation.  It helps you with getting therapies for you.  It helps you understand the mechanisms of smoking addiction and how you can get rid of it.

    Dr. Mehmet Oz answered:
Counseling is one of the many treatment options that can help you quit smoking. Cigarette smoking is a chemical dependence on nicotine similar to a dependence on alcohol, cocaine or heroin. Once you're hooked, you have to overcome the physical and psychological withdrawal. Counseling can help you identify the triggers, or situations that cause you to smoke. Then, your counselor can help you develop coping strategies to avoid those triggers. Studies show that people are more successful quitting when they use a combination of counseling and medication instead of medication alone. Quitting is difficult, and counseling can help you get it done.

I think counseling can help you deal with the addiction process and learn ways to channel your need for tobacco into other more positive ways.  Some people who have one addiction can have others addiction which can be sorted out by the counselor

Counseling, which can be in person, online, or via telephone, is helpful. Many studies have shown that patients who engage in therapy have more attempts at quitting and are more likely to have success in smoking cessation. If you have underlying issues that led you to smoke, these can be addressed in therapy and further help you to quit.
