    You can use ground, lean turkey or chicken in your meatballs. If you don't like the texture, mix half lean ground beef and half ground turkey and follow your favorite recipe. Cook them in the oven and then blot some of the extra oil off with a paper towel. Use fresh garlic in your sauce and serve with a wheat pasta or "Smart Taste" pasta which is white pasta that has extra fiber. Dip some crusty wheat bread in olive oil mixed with spices and have a salad to make a healthy meal.

    Tender Meatballs and Pasta

    Pasta:

    6 oz. De Cecco Whole Wheat Spaghetti, uncooked
    1 cup Seeds of Change Tomato Basil Genovese Pasta Sauce
    ¼ cup chicken broth
    12 Foster Farms Italian Style Turkey Meatballs, cooked
    Grated Parmesan cheese for serving

    Bread:
     
    2 slices Ener-G Foods Light Brown Rice Loaf, cut in half
    ⅓ cup shredded Monterey Jack and cheddar cheese blend

    Salad:
     
    4 cups baby spinach leaves
    1 hard-boiled egg, sliced
    ¼ cup shredded mozzarella
    2 mushrooms, thinly sliced

    Dressing:
     
    ⅓ cup extra-virgin olive oil
    2 Tbsp. fresh lemon juice
    Salt and pepper, to taste
    1. For the pasta: Cook according to package directions; drain and set aside. In a medium saucepan, stir together the pasta sauce and broth over medium heat until simmering. Add meatballs and simmer until they’re warmed through (approximately 10 minutes). Ladle the sauce over the pasta.
    2. For the bread: Sprinkle the cheese over each half slice of bread and broil for 1-2 minutes or until cheese is melted.
    3. For the salad: Arrange the spinach, eggs, mushrooms and cheese on chilled salad plates.
    4. For the dressing: Whisk together the olive oil and lemon juice; season with salt and pepper to taste. Dress the salads.
    5. Dish out the pasta and sprinkle with Parmesan. Serve with bread and salad.
