Some people develop them during or after stressful events or situations, such as examinations or a stressful job situation such as meeting a deadline. Canker sores have been known to develop after eating certain foods to which a person may be hypersensitive or allergic. Perhaps a common denominator in these possible triggers is the immune system, but it is not clear how any of them might affect it in a way that allows canker sores to develop.
