When shopping for meat, words like round, loin or leg indicate cuts that are lean or lower in total fat and saturated fat. If you're not sure of the cut, ask the butcher or check the label.

Examples of lean cuts of meat are:
  • Beef: Eye round, top round, round tip, bottom round, sirloin, top loin, tenderloin, flank. These may be cut as roasts or steaks. For ground beef, choose 95% lean ground beef.
  • Pork: Tenderloin, top loin roast, loin chop, sirloin chop, rib roast or chop and boneless ham.
To prepare lean cuts of meat, try broiling, grilling, roasting, panbroiling, braising, stewing or stir-frying.
