Mustard greens are a low-calorie, antioxidant dense food. They are an excellent source of carotenes, vitamin C, folic acid, manganese, vitamin E, copper, dietary fiber, vitamin B6, and calcium. They are a very good source of phosphorus, vitamin B2, potassium, magnesium, protein, vitamin B1, and iron. A 31/2-oz (100 g) serving of cooked mustard greens provides 35 calories, 2.3 g of protein, no cholesterol, 0.4 g of fat, 7.2 g of carbohydrate, and 3.3 g of fiber.
